DVDRemaster
DVDRemaster is an utility for Mac OS X to recompress large DVDs so that they fit on standard DVD5. DVDRemaster can work in two modes. It can either preserve all tracks or work in "Movie Only" mode where everything but the main feature is discarded. Advanced users will appreciate the Pro version, which lets you choose exactly which video and audio tracks you want to copy.

D-Subtitler
D-Subtitler is a little software which let you extract subtitles of your DVD and put it in a .srt file. To use D-Subtitler, you have to rip your DVD in your hard drive. You can rip it in VIDEO_TS folder or in a big .vob file. Open the result of the rip with D-Subtitler, choose the subtitle track to extract and click on the green button.
